Broccoli Filters

One of the most delicious healthy snacks I’ve ever made. I can eat everything in one sitting. If you don’t know what to do with your broccoli harvest, try these fun snacks! 🥦


Ingredients:

1 broccoli head cut into florets
1 large egg
3 tablespoons minced onions
2 garlic cloves pressed
½ cup shredded mozzarella cheese (use dairy free alternative)
2 tablespoons flour (use gluten free alternative)
½ teaspoon salt
¼ teaspoon black pepper
1/4 teaspoon oregano

Directions:
🥦In a food processor, pulse the broccoli until it’s the size of fine couscous (about 2 cups grated)
🥦In a large bowl, combine the broccoli, egg, onions, garlic, cheese, flour, and seasoning. Stir until the mixture is well combined and moistened.
🥦Form the mixture into 1/2-inch thick patties, about 4 inches wide. It will make about 6 fritters.
🥦Heat the cooking oil in a large skillet over medium-high heat. Add the fritters in batches of 3 and fry, turning once, until crispy, about 10 minutes. Transfer the fritters to a large paper towel-lined plate and cover while you finish cooking the remaining fritters.
🥦Serve the fritters warm with your favorite dipping sauce (I use my go to sriracha-mayo).
