Honey Mustard Salad

[Serves 2]
Crispy tofu:
200g firm organic tofu
1-2 cups bread crumbs of choice
1/4 cup flour of choice
1/3 cup water or soy milk
Pinch of salt, pepper and oregano
Enough cooking oil to shallow fry

‘Honey’ mustard dressing:
2 tbsp dijon mustard
2 tbsp maple syrup
1/2 lemon juiced
1/4 tsp garlic powder
2 tbsp olive oil or hemp oil
Pinch of salt and pepper

Salad:
Lettuce
Cherry tomatoes
Red onion
Avocado

1. Firmly press the tofu to remove any water and slice into 1 cm thick rectangle pieces and set aside. In a shallow bowl combine the flour, water, salt, oregano and pepper, and in a separate bowl add the bread crumbs.
2. Dip the tofu into the batter and drip any excess off, then toss it in the panko crumbs and place on a plate.
3. Place a frypan over medium heat and add enough cooking oil to cook 1/2 of the tofu. Once the oil is hot add in the tofu pieces and cook until lightly golden on each side. Be careful to not burn the tofu. Once ready set aside onto a paper towel to remove any excess oil.
4. In a small bowl whisk together the dressing ingredients.
5. Cut the tofu into smaller pieces. Add all the salad ingredients to a bowl and drizzle with the dressing and extra oregano.
