TORTILLA EGG WRAP


Ingredients

2 large eggs
1 tbsp olive oil
One 8-inch tortilla
1/3 cup spinach
3 tbsp grated mozzarella
Salt and black pepper
Any toppings you like. I used:
Cubed grilled chicken breast, diced tomatoes, grated mozzarella cheese

Combine the eggs with a pinch of salt and pepper in a small bowl and whisk to combine.

Add olive oil to a nonstick skillet over medium heat. Add spinach and sauté for three minutes. Pour in the egg mixture and swirl the skillet to coat the bottom. Wait about 3 minutes and cover your egg mixture with a tortilla and as soon as you can spin the tortilla around on the bottom of the pan, the egg mixture is cooked. Flip it over and place it back in the skillet, tortilla face down/ egg side up.

Scatter your ingredients on the half of the tortilla, ending with the grated mozzarella. Continue to cook until the bottom is golden brown, about 1 minute more. Remove from the heat and slide onto a plate.  
Starting with the side that has all the filling, roll the tortilla into a tight wrap or fold it over. Keep the seam side facing downward so the wrap stays closed. Cut in half crosswise and serve. Enjoy 😊
