sushi rice -
1 cup jasmine rice
3 Tbsp rice vinegar
1/2 tsp salt
1 tsp brown sugar
teriyaki sauce -
2 tsp soy sauce or coconut aminos
1 Tbsp honey
1 teaspoon sesame oil
1/2 tsp grated garlic
1/2 tsp grated ginger
1 Tbsp Sriracha
cook rice per package instructions. on the side, mix together rice vinegar, salt, and brown sugar - once rice is done, add mixture to the rice and stir.
mix together ingredients for teriyaki sauce and set aside. cut salmon into 1/2 inch cubes. in a pan, on medium heat, add oil to a pan and add salmon to the pan. cook until browned on each side. add sauce to the pan and mix well.
assemble bowl with rice, salmon, edamame, avocado and anything else you want! garnish with sesame seeds and green onions.
