Another easy, simple meal idea. Only 5 main ingredients (I don’t count oil and common spices because you’re mostly likely going to have those on hand!) and you can make this meal.
3 chicken breasts
24 ounce jar of pasta sauce
10’ounces chickpea pasta
1/4 cup grated Parmesan
4 oz mozzarella cheese
Spices:
1 tsp salt
1/4 tsp pepper
1/2 tsp dried parsley
1 tbsp olive oil

Instructions:
Heat an oven safe skillet over medium heat
Pound the chicken so it’s thin and all the pieces are about the same thickness.
Add salt + pepper + parsley to a small bowl and stir together
Add the spice mixture to the chicken
Add olive oil + chicken to the heated pan
Cook
Covered on the stove for about 7-8 minutes, flip, and cook the other side
While the chicken cooks, cook the pasta Al dente

Add the pasta + 3/4 the jar of sauce + Parmesan to the pan and stir together
Add the chicken on top.
Spread the rest of the sauce on the chicken
Add the mozzarella on top
Preheat oven to broil
Add the skillet to the oven and cook for 2-3 minutes
Remove and enjoy!
