An easy 5 ingredient meal ready in under 20 minutes. This would also be an easy Super Bowl appetizer! But overall just a quick and easy meal. Enjoy!
Ingredients:* 1 15-ounce can vegan refried beans
* 2 avocados
* 1/2 packet taco seasoning
* 8 small gluten free tortillas
* Salsa for dipping
Other:
* Salt and pepper to taste
* Olive oil
Optional:
* hot sauce
* shredded lettuce
* Vegan cheese
Instructions:
* Add the avocado into a bowl and sprinkle with salt & pepper. Mash with a fork.
* Add the refried beans and taco seasoning to a separate bowl and stir to combine.
* Brush one tortilla on one side with olive oil. Then clip it over and add mashed avocado and beans on top. Starting at one end, roll the tortilla up. Add rolled tortilla to a plate, the side you brushed with olive oil should be facing out.
•air fry at 400F for 10 minutes. Remove and serve with salsa and any other toppings you want!
